Peppermint Bark Rice Krispie Treats


You know I’m not a serious dessert-maker, but I decided to make an exception this week. It’s Christmas, and I was in the mood to whip up something holiday-themed and delicious. And that, my friends, is what I did. I give you...Peppermint Bark Rice Krispie Treats.

Moneymakers.

These bad boys have all of the awesome elements of peppermint bark, but they’re so much better. Because they also have Oreos, and marshmallows, and Rice Krispies. Plus, they only took me about 20 minutes from start to finish, and I never even had to turn on the oven.*
When they were ready, I stood there admiring my handiwork for a good five minutes before performing my taste test. A lot of things were running through my head after that first bite, the most important being that I am a genius and that these Rice Krispie Treats are my greatest creation. Ever. I then proceeded to eat several of them in one sitting. Put me on the Naughty List! It was worth it.

Just kidding! I'm pretty sure I was already on the Naughty List.

These incredibly festive Rice Krispie treats are off the beaten path in the best possible way. When everyone else is making cookies and brownies, you come out of nowhere with these. You’re so creative! I guarantee that you’ll get twice the compliments for putting in half the effort, which is pretty much my goal in life.
Make Peppermint Bark Rice Krispie Treats for your family. Make them for your friends. Take them with you to work, and hand them out when you make a mistake or need a favor. Single? Perhaps you should skip actually eating these, and start taking them to the bars with you. Just a thought.
            I know it’s Christmas Eve, but there is still time to pick up a few things and make a batch of these before the festivities begin. On the off chance that your family is getting on your nerves, escaping to the kitchen is always a wonderful way to get some alone time, while simultaneously wowing everyone with your domestic skills. Two birds, one stone.

Peppermint Bark Rice Krispie Treats: (Serves 12)


Ingredients:
9 cups mini marshmallows
1 box Rice Krispies
3 tbsp salted butter
8 Oreos, crumbled
¾ cup peppermint candies/candy canes, crushed
2 oz white chocolate (about half a large bar)
2 oz dark chocolate

Preparing your Rice Krispie Treats:
*Grease a baking pan with butter or cooking spray.
-Crush your Oreos and peppermint candy. You can do this any old way you like, but i like to put them in plastic bags then go to town on them with a rolling pin...


-In a large pot, melt the butter over low heat. When melted, add the marshmallows and allow them to melt slowly, stirring periodically. This should take 2-3 minutes.


-When the marshmallows are completely melted, turn off the heat. Immediately add ½ of the crumbled Oreos and ½ of the crushed peppermint candy (the rest will be used for decoration). Mix well.


-Add the Rice Krispies and mix well. 


-Quickly pour the mixture in to the prepared baking pan. Smooth with the spatula. Sprinkle the remaining crumbled Oreos and peppermints on the top. Use a piece of parchment paper to firmly press your Rice Krispie treats into the baking pan and flatten the top.

If you don't have parchment paper, you can also use aluminum foil.

-Break your dark chocolate into small piece and place it into a microwave safe bowl or measuring cup. (I like to use a measuring cup with a lip because it makes for easy drizzling). 


Microwave for 60 seconds or until it is completely melted. Drizzle over the top of your Rice Krispie Treats. This is where you get to be artistic. 


-Repeat with the white chocolate.

BOOM.

-Refrigerate for 20-30 minutes until the chocolate sets. Cut into squares and serve. You’re about to become incredibly popular…
